Keep your eyes peeled for the upcoming return of Category 12 Brewing‘s Transmutation Belgian Specialty Ale. This Belgian dark strong ale, at 9.6% ABV uses amber candi sugar to create a rich, smooth flavour, and the use of Northwest Hops brings it home with a light bitterness fitting of a west coast beer.
This beer is definitely not one to miss as a late winter/early spring transition away from the classic stouts and porters. Rich yet well carbonated, this pairs well with earthy, savoury vegetables like squash, rich foods like foie gras, and desserts like crepes suzette, custards and puddings.
